Western Style Chicken Stew 西式炖鸡

About the Recipe

Ingredients

Meat Options: Chicken Thigh or Chicken Breast.


To marinate the chicken:

  • 1 lb 12 oz (800g) chicken breast / chicken thigh (diced)

  • 2 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 cup (60 ml) water


To prepare the stew:

  • 1 brown onion (diced)

  • 1 tablespoon minced garlic

  • 2 stalks celery (diced)

  • 2 carrots (sliced into rounds)

  • 1/2 cup (125 ml) dry white wine (optional, can be omitted)

  • 2 tablespoon unsalted butter

  • 1/4 cup (35 g) plain (all-purpose) flour

  • 5 cups (1.25 L) chicken stock

  • 2 teaspoon dried thyme/italian mixed herbs/italian seasoning

  • 2 medium potatoes (diced)

  • 1 tablespoon Worcestershire sauce

  • 1/4 cup (60 ml) thickened (heavy) cream (optional)

  • 1/2 cup (50 g) freshly grated parmesan

  • 2 tablespoon finely chopped parsley (optional)

Preparation

Time to cook:

  1. Heat the olive oil over medium–high heat.

  2. Add the chicken and sprinkle it with salt and pepper.

  3. Cook for 3–4 minutes, tossing regularly until browned all over.

  4. Remove the chicken and set aside (it will continue cooking in the stew).

  5. Add the water to the pan and stir to scrape up any tasty bits stuck to the bottom of the pan.

  6. To the same pan, add the onion, garlic, celery and carrot.

  7. Cook, stirring, for 3–4 minutes until slightly softened.

  8. (Optional) Add the white wine and cook, stirring, for 1–2 minutes, or until most of the liquid has evaporated.

  9. Add the butter and cook for 1 minute, or until melted.

  10. Add the flour, stirring for 1 minute or until the flour has dissolved and formed a paste around the vegetables.

  11. Add the cooked chicken back to the pan.

  12. Add the chicken stock, dried thyme, potatoes and Worcestershire sauce.

  13. Bring to the boil, then reduce the heat to low and simmer, uncovered, for 15–18 minutes or until the vegetables are tender and the soup has thickened.

  14. Turn the heat off.

  15. (Optional) Add the cream and parmesan (if using), followed by the parsley.

  16. Stir to combine.

  17. Perfect to go with rice, pasta, or even crusty buttered bread!
